Korean Beef Fried Rice

Ingredients

Beef marination

  • 500 gr minced beef I used lean beef mince
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tsp garlic powder
  • a pinch of salt and pepper

Fried rice sauce

  • 2 tbsp gochujang
  • 2 1/2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil

The rest of the ingredients

  • 3 shallots sliced thinly
  • 4 cloves garlic minced
  • 2 serves 1 day old fried rice about 500 gr of rice
  • 1/2 tsp sesame oil
  • spring onion and sesame seeds as garnish optional

Instructions

  • Marinade the beef with the marination sauce in big silver bowl and set aside whilst we prepare for the other ingredients.
  • Mix the fried rice sauce in a small container.
  • Sliced the shallots thinly and minced the garlic.
  • Once everything ready, pre-heat a wok or any pan in medium-high heat.
  • Divide the beef mince into 4 equal part, brown the beef in the wok about 1-2 minutes each. The purpose of doing this is to cook the beef properly without getting it too watery. When we cook beef in large batches over low heat, it will drop the temperature and will draw out the moisture from the beef. We would then ended up with the beef boiling in it's water rather than pan-frying them. No one wants wet fried rice!
  • Once the beef all browned, pour 3 tbsp of vegetable oil on medium heat and pour the shallots and garlic. Stir fry for 1-2 minutes until the aroma comes out.
  • Add the rice into the wok and toss it for about 30 seconds.
  • Add the beef minced from earlier and toss it around for about 1 minutes.
  • Make a hole in the middle of the wok with your spatula and add the fried rice sauce.
  • Mix it all together and cook for another 5 minutes while continuously stirring every now and then.
  • Once the fried rice looks dry and the sauce has been mixed well, add in the additional sesame oil (1/2 tsp). Mix it for 5 seconds and turn off the heat. Don't overcook it at this stage as we don't want the sesame oil flavour to be burned off.
  • Set it aside and serve! I recommend making an omelette to serve the fried rice with and having spring onions and sesame seeds for garnish.
